Shun Cutlery, manufactured by KAI Group, has many top chefs as designers and avid fans. Including Alton Brown host of the Food Networks "Good Eats" and a line designed by Ken Onion, world renowned knife designer.
Shun Cutlery features several lines, as mentioned Alton Brown and the Alton Angles, and Ken Onion designed line. There are also The Shun Classic, The Shun Pro and the Shun Pro II. The Shun Classic features a double bevel dsign while the Shun Pro and Shun Pro II feature a single bevel. This is due to the thickness of the blade.
Another difference between the Pro and the Classic series is the concave back of the blade. The Shun Pro has what amounts to a single large hallow divot in the back which reduces friction during cutting and thus stickyness of the knife against the food being cut.
